Blueberry Muffins


Preheat oven to 350 degrees.  

Grease and flour muffin tins.  Try to get it out of the way first. There's no need to grease and flour the tins if you choose to use cupcake liners.

INGREDIENTS

2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
¾ cup white sugar 
1 egg
1 cup milk
¼ cup vegetable oil
2 teaspoons vanilla
1 cup of blueberries

PROCEDURE

1.  Sift together all the dry ingredients.

2.  Combine all liquid ingredients, including oil (feel free to use melted butter instead).

3.  Add the liquids to the dry ingredients and mix JUST until the flour is moistened.  The batter will look lumpy.  Be careful not to overmix.

4.  Fold in the blueberries.

5.  Fill the tins 1/2 to 2/3 of the way full.

6.  Consider this measurement:  2 oz of batter for small muffins.  4 oz of batter for medium muffins.  5-6 oz of batter for large.  Your muffin tins should coincide with your batter choice.

7.  Bake for approximately 20-30.  Use a toothpick to ensure that they are done.  The toothpick should come out clean.

8.  Enjoy.
